Chef Jock Zonfrillo had fond memories of eating panna cotta with poached strawberries as a child in his native Scotland. At Orana, he’s given the recipe a distinctly Australian flavour, using strawberry gum leaves from the Atherton Tablelands which are infused with an oil and cooled, creating the vivid green emulsion in the pool of juiced strawberries that surrounds the set buffalo milk.
